Roasted Elephant Garlic
Chop your elephant garlic bulb in half horizontally.
Drizzle the exposed cloves with olive oil and sprinkle with salt and pepper.
Put the bulb back together, loosely enclose in foil and place in the preheated oven. Depending on the size of the bulb it will take between 40 minutes and 1 hour to roast.
Turn down the oven to 180C and leave for an extra 30 mins to get a more caramelized flavour.
Once roasted it can be simply spread on bread, served as a side to barbecued or roasted meats or added to sauces and soups

Roasted Black Pepper & sea salt scape – sounds FAB !!
Garlic Scape Hummus –
3 15.5 oz cans chickpeas, drained
⅓ cup garlic scapes, chopped
¾ cup tahini
¾ cup of fresh lemon juice,
¼ cup extra virgin olive oil
1½ teaspoons cumin
1 teaspoon sea salt

Garlic Scape Pesto
1 bunch (about 7-8) garlic scapes
generous handful of toasted (or raw) walnuts
1-2 ounces parmesan
3/4 cup basil leaves
1/3 cups of good-tasting extra virgin olive oil
salt, pepper
Roughly chop the garlic scapes, with out without the very top, flower part (See note in caption above). Process the nuts and cheese in a food processor. Add the remaining ingredients and process until smooth. Adjust seasoning to taste. Serve on toasted bread, with pasta, potatoes, eggs dishes other grains. . .
Salt and Pepper Steak and Garlic Scape

SPINACH, PEA AND GARLIC SCAPE SOUP
Ingredients
Olive oil, for cooking
Spoon of butter
onion, peeled and chopped
couple garlic scapes, chopped
handful of fresh chives
asalad bowl full of fresh spinach leaves
heaping cup of frozen green peas
1 Ltr chicken or veggie stock
salt
splash of cream
Directions
In a large saucepan, heat a drizzle of oil with a dab of butter over medium-high heat. Cook the onion for a few minutes, until soft. Add the garlic scapes and tear in the chives, sprinkle with salt and cook for a few more minutes, until everything is soft.
Add the spinach and peas and cook until the spinach wilts.
Add the stock and bring to a simmer; cook for 20 minutes, or until all the veggies are nice and soft.
Season with salt and add a splash of cream. Puree with a hand-held blender until smooth. Serve warm.

Garlic Scape Butter – Great for Garlic Bread garlic scapes
1/3 cup fresh parsley
2/3 cup unsalted butter
1/2 teaspoon sea salt
pepper to taste
Blitz all together and spread on some bread /baguette – cook in till it melts
